Asparagus, Avocado, Rhubarb Salad
Asparagus, Avocado, Rhubarb dish by Executive Chef Lorenzo Loseto from Toronto Michelin Guide restaurant, George. This easy vegan recipe is very light but with intense flavour.
Ingredients
Asparagus
- 2 bunches Asparagus, medium size or 3oz per person
- 50 mL Black Quinoa
- 50 mL Red Quinoa
Avocado Carpaccio
- 2 pieces Avocados
- Dash of Salt to taste
- Dash of Lemon Juice to taste
Rhubarb Slaw
- 1 small stalk Rhubarb
- 1/2 small Red Onion
- 1 small Cucumber
- 1 small Tomato
- 2 pieces Red Radishes
- 1 tablespoon Honey
- 1 tablespoon Olive Oil
Instructions
- Cook Black and Red Quinoa based on package instructions
- Cut off woody stems of Asparagus and peel. Blanche lightly.
- Slice Avocado thinly. Rub with lemon and season with salt.
- Julienne Rhubarb Slaw vegetables. Toss in olive oil and honey.
- Assemble how you please. Presentation can be different.
