This dish is a classic Italian raw mushroom salad, or insalata di funghi crudi. It’s a perfect example of how Italian cooking celebrates simple, high-quality ingredients.
The flavor is a beautiful balance of earthy, savory, peppery, and bright. The mushrooms are sliced paper-thin and “cured” slightly by the lemon juice, which gives them a wonderfully tender texture.

What You Need for Champignon Salad
With a recipe this simple, the quality of your ingredients is what makes it shine.
Equipment
Here are the few simple tools that will make preparing this salad a breeze.
- Sharp knife or a mandoline: A mandoline is the professional’s secret for getting those perfectly uniform, paper-thin mushroom slices, but a good sharp knife and a steady hand work just as well.
- Large mixing bowl: You need enough space to gently toss all the ingredients together without bruising the delicate mushrooms or greens.
- Vegetable peeler or cheese shaver: This is the best way to get those beautiful, wide ribbons of Grana Padano that melt in your mouth.
Ingredients
Here’s a look at the key players in this simple yet sophisticated salad.
- Cremini Mushrooms: These are the star of the show. They have a firm texture and a mild, earthy flavor that’s perfect for eating raw. Just as Chef Capra advises, be sure to “pick the tightest and firmest” ones you can find.
- Celery: This adds a fresh, crisp, and slightly salty crunch that provides a wonderful textural contrast to the soft mushrooms.
- Red Onion: A little bit of sharp, pungent bite from the onion cuts through the richness of the cheese and oil, and it adds a beautiful pop of color.
- Grana Padano: This hard, nutty Italian cheese adds a deep, savory, umami flavor. It’s no surprise it’s the cheese of choice here, as Chef Capra is a known ambassador for this classic Italian product. For any leftovers, you can also make Prosciutto and Cheese Cupcakes.
- Parsley: Fresh, coarsely chopped parsley brings a clean, herbaceous lift that brightens up all the other flavors.
- Lemon: The acidity from fresh lemon juice is essential. It acts almost like a marinade, tenderizing the mushrooms and making all the flavors pop.
- Olive Oil: Don’t skimp here. A good quality extra virgin olive oil is a key flavor component, lending its fruity and peppery notes to the dressing.
- Arugula or Butter Lettuce: You have a choice for the base. Peppery arugula adds a spicy kick that stands up to the other flavors, while soft butter lettuce provides a more delicate, tender cradle for the salad.

FAQs and helpful tips for Champignon Mushroom Salad for Beginners
Here are a few tips and answers to common questions to make sure your mushroom salad is perfect every time.
The best way to clean mushrooms for a raw salad is to gently wipe them with a damp paper towel or use a soft mushroom brush. This keeps them from absorbing excess water, which can make them soggy. If they are very dirty, a very quick rinse followed by immediate and thorough drying with a towel is okay.
This salad is definitely best enjoyed right after it’s dressed, as the lemon juice will continue to soften the mushrooms over time. However, you can absolutely prep all the components ahead of time. Just wash and slice all your vegetables and store them in separate airtight containers in the fridge for up to a day. Then, just toss it all together right before you’re ready to serve.
They are actually the same type of mushroom (Agaricus bisporus) at different stages of maturity. White button mushrooms, often called champignons, are the youngest. Cremini mushrooms, also known as baby bellas, are slightly more mature, which gives them a firmer texture and a deeper, earthier flavor, making them an excellent choice for this salad.
The best substitute would be its close cousin, Parmigiano-Reggiano. It will have a slightly saltier and nuttier flavor, but it works beautifully. A good quality Pecorino Romano could also work if you enjoy its sharper, saltier taste.
3 mm thickness for the mushrooms? It’s quite important. Slicing the mushrooms thinly allows the lemon juice and olive oil to marinate them quickly, resulting in a tender, delicate texture. If the slices are too thick, they can be a bit chewy and overwhelming
