Ingredients

Cobb Salad

  • 1 piece Butternut Squash
  • 1/4 cup Feta Cheese
  • 1 piece Avocado
  • 1 piece Egg
  • 1/8 cup Pumpkin Seeds
  • 1/4 cup Chickpeas
  • 1/4 cup Roast Chicken, boneless
  • 1/8 cup Tomato
  • Homemade Ranch Dressing to taste
  • Romaine Lettuce
  • Kale

Ranch Dressing

  • 1 cup Mayonaise
  • 1/2 cup Buttermilk
  • 2 tablespoon Lemon Juice
  • 1 teaspoon Paprika
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Parsley, chopped
  • 2 tablespoon Chives, chopped
  • 2 teaspoon Jalapeno, finely chopped
  • 2 teaspoon Shallots, finely chopped

Instructions

Ranch Dressing

  1. Mix all ingredients together well

Cobb Salad

  1. Preheat oven to 350
  2. To roast the Butternut Squash peel and cut evenly into a medium dice
  3. Spread on tray and cover with salt and pepper
  4. Bake until cooked through (able to chew with no firmness) (roughly 20 minutes)
  5. Boil egg from cold water, once boil is reached allow to boil for 7 minutes before shocking in cold water
  6. Once egg is cool cut into 1/8ths
  7. While cooling, cut/shred the cooked chicken to preferred size
  8. Cut tomatoes
  9. Shred Romaine and Kale
  10. Season romaine and kale with ranch dressing. Put on bottom of plate
  11. Add one row of each item. It doesn't matter the order.
  12. Make sure all individual toppings are seasoned with salt and pepper
