What is Le Farcous?
Traditionally made with Swiss chard, Le Farcous are delicate, savory fritters (or pancakes) that pair fresh greens with eggs, cheese, and aromatics for an easy, comforting bite.
Instead of Swiss chard fritters, Chef Raynaud swaps chard for baby spinach, giving the fritters a slightly milder flavor while keeping the same rich, cheesy goodness.

What You Need For For Le Farcous
Equipment
With just a handful of basic kitchen tools, these fritters come together effortlessly.
No fancy gadgets: just simple equipment that you’ll most probably have at home already.
- Mixing Bowl – The heart of the prep. You’ll need one to bring everything together into a smooth batter.
- Whisk or Fork – Helps mix the eggs evenly and prevents clumping in the batter. A fork works in a pinch, but a whisk gives better results.
- Grater – Essential for shredding the cheddar into fine pieces, ensuring it melts nicely into the fritters.
- Knife & Cutting Board – Needed for slicing shallots and shaving the spinach. A sharp knife makes prep quick and easy.
- Non-Stick Pan or Skillet – The key to crispy, golden fritters without them sticking to the pan. A well-seasoned cast-iron skillet works beautifully too.
- Spatula – Crucial for flipping the fritters without breaking them. A thin, flexible one makes the job easier.
- Paper Towels – Great for draining excess oil after frying, keeping them crisp but not greasy.
Le Farcous Ingredients
Each ingredient plays its part in creating fritters that are crispy, flavorful, and incredibly satisfying.
Simple, straightforward, and undeniably good.
- Eggs – The foundation of the fritters, giving them structure and helping bind everything together. They also add richness and depth.
- Baby Spinach – A milder substitute for Swiss chard, packed with nutrients and bringing a fresh, slightly earthy flavor. It also keeps the fritters tender.
- Rice Flour – Helps keep the texture light and crisp instead of dense. It’s also naturally gluten-free, making it a great option for different diets.
- Shallots – Slightly sweeter and milder than onions, shallots bring a gentle aromatic note that balances the savory elements beautifully.
- Cheddar Cheese – The key to richness and sharpness in flavor. As the fritters cook, the cheese melts, adding a wonderful creamy element.
- Baking Powder – A little lift goes a long way. This ensures the fritters don’t turn out too dense, giving them a soft, airy texture.
- Salt – Just a pinch makes all the flavors pop. It enhances everything, from the greens to the cheese.
- Canola Oil – A neutral oil with a high smoke point, perfect for achieving a crisp, golden-brown crust without overpowering the ingredients.

FAQs and Helpful Tips for Making Le Farcous
With a few easy swaps, Le Farcous can be just as satisfying and flavorful without any animal products. Whether you’re keeping it traditional or going fully plant-based, this recipe is a winner.
Absolutely! Swap out the eggs for a flaxseed or chia seed egg (1 tablespoon of seeds mixed with 2.5 tablespoons of water per egg). Use dairy-free cheddar or nutritional yeast for that cheesy flavor, and make sure your baking powder is vegan-friendly.
Yes. Swiss chard, kale, or even finely chopped herbs can work. Just keep the ratio balanced so the fritters hold together.
The trick is heating the oil just right—hot enough to crisp, but not so hot that they burn before cooking through. Medium heat works best.
These work as an appetizer, a snack, or a side dish. Pair them with a salad, creamy dip, or even poached eggs for brunch.
