Ingredients

  • 4oz (135g) Fresh Linguine Pasta
  • 3 tablespoon Olive Oil
  • 3 cloves Garlic, thinly sliced
  • Anaheim Pepper, sliced (or chilli flakes)
  • 1/4 cup (100ml) Dry White Wine
  • 6oz (170g) tinned Yellow Tomato Purée
  • 4 pieces Basil Leaves, torn
  • 1 tablespoon Unsalted Butter
  • 4 tablespoon Parmigiano, grated
  • 2 tablespoon Stracciatella Cheese (or Buratta)
  • 1 teaspoon Flaked Salt

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Add garlic and cook until lightly browned.
  3. Add 4–5 slices of Anaheim chili (or chilli flakes).
  4. Deglaze the pan with dry white wine.
  5. Stir in the yellow tomato purée, season with salt, and let it reduce by one-third. Set aside.
  6. Cook the linguine in salted boiling water until al dente.
  7. Save 1 cup of pasta water before draining.
  8. Reheat the sauce, add the pasta, and cook for 1–2 minutes.
  9. Stir in basil leaves, butter, and half the Parmigiano. If the sauce feels thick, add the reserved pasta water.
  10. Plate the pasta and top it with stracciatella cheese.
  11. Drizzle with olive oil, sprinkle with flaked salt, and add the remaining Parmigiano.
